What You’ll Need:
Quinoa
Cucumber
Bell peppers
Red onion
Chickpeas
Olive oil
Fresh lime juice
Honey
Yellow mustard

How to Prepare The Easiest Quinoa Salad
Ingredients:
2 cups quinoa, cooked
1 cup cucumber, diced
3 bell peppers, diced
1/2 -1 red onion, diced
1 cup chickpeas
1/2 cup olive oil
3 tbsp fresh lime juice
2 tsp honey
2 tsp yellow mustard
Salt and pepper to taste
Process:
Step 1: In a large bowl, mix together quinoa, cucumber, bell pepper, red onion, and chickpeas.
Step 2: For the vinaigrette, mix together olive oil, lime juice, honey, mustard, salt and pepper until blended.
Step 3: Drizzle vinaigrette over quinoa salad mixture, toss, and serve!
