This recipe comes together so easily and the hardest thing you will have to do is cook the quinoa. Other than that, you just have to chop up and stir together a bunch of yummy ingredients and you're good to go.

What You’ll Need:

  • Quinoa

  • Cucumber

  • Bell peppers

  • Red onion

  • Chickpeas 

  • Olive oil

  • Fresh lime juice 

  • Honey

  • Yellow mustard

  • Salt and pepper


How to Prepare The Easiest Quinoa Salad




Ingredients:

  • 2 cups quinoa, cooked

  • 1 cup cucumber, diced

  • 3 bell peppers, diced

  • 1/2 -1 red onion, diced

  • 1 cup chickpeas 

  • 1/2 cup olive oil

  • 3 tbsp fresh lime juice 

  • 2 tsp honey

  • 2 tsp yellow mustard

  • Salt and pepper to taste


Process:

Step 1: In a large bowl, mix together quinoa, cucumber, bell pepper, red onion, and chickpeas. 

Step 2: For the vinaigrette, mix together olive oil, lime juice, honey, mustard, salt and pepper until blended.

Step 3: Drizzle vinaigrette over quinoa salad mixture, toss, and serve!



NOTES: 

  1. I like to cook my quinoa in chicken stock

  2. This recipe is best served cold!
