Is One Pot Marry Me Pasta the Ultimate Comfort Food? Yes, yes it is.
What's better than comfort food on any given night? Comfort food that only takes one pan. Heck, you can just eat it straight out of the pan, no pasta bowls necessary!
So, how did this heavenly bowl of cheesy, tomato-ey, basil-y goodness come to be, you ask? I have to be honest, this recipe came from a mistake I made when I was trying to make Marry Me Soup one rainy night. I got the soup to pasta ratio wrong and, well, I ended up with a pasta dish that has quite frankly changed my life for the better. Instead of a soup fail, I ended up with a saucy, spicy Marry Me Pasta dish so delicious I knew I had to share it with you! Even kitchen mistakes can turn into game-changing recipes.
So what makes this pasta so special? A few key players take it over the top. Sun-dried tomatoes make everything better - they're like candy that pairs well with most savory dishes. Sweet onions. They're like regular onions, but sweeter (I know, groundbreaking). They are going to lend a mellow sweetness. Fresh basil takes it to a whole new level of freshness. A blend of paprika and red pepper flakes creates the perfect amount of warmth. And don't forget the creamy, cheesy sauce that brings it all together!
Now, a couple tips. Use low-sodium chicken broth so things don't get too salty. We don't need to feel icky or swollen after eating this perfect meal. Last, you can use any pasta, but the shells will trap in some of that sauce. Think of an al dente sauce vessel, kind of like how celery is really just a peanut butter vessel.
And PLEASE. If you can, make sure any dairy you're using is grass fed. Happier cows make healthier products and you will be gaining so many more vital vitamins and nutrients.
In just 30 minutes, you can have the ultimate one-pot meal ready to comfort you on a busy weeknight, or feed a crowd for family dinner. This Tuscan pasta is creamy, sweet, savory, and spicy, with layers of flavor in every bite. I'm telling you, it's about to become your new favorite thing to make. So cozy up with a bowl of this saucy pasta perfection. You can thank me later!
