I was diagnosed with Type 1 diabetes at the age of 17, when it almost took my life. Having to always test my blood sugars and calculate my insulin doses, I was able to see how the food we put into our bodies affects us. It was utterly fascinating to me. I spent months doing research, taking nutrition courses, and even got a nutrition certification so I could gather knowledge to use in my recipe development process. I knew I needed to share my knowledge, which is what inspired me to create Kitchnkylie. I know firsthand how difficult it can be to maintain a healthy diet and I want my readers to feel confident in their ability to create healthy meals without sacrificing taste or quality!
